The olive trees that surround Mas Terrats are one of the most characteristic elements of this corner of the Empordà. There are almost fifty trees that, for years, each season produce hundreds of kilos of olives. Some fruits that subsequently turn into virgin olive oil, the essence of the Mediterranean diet.

Olives are harvested in autumn and still in the traditional way. A cloth web is placed on the floor of each olive tree, surrounding the entire tree. The branches are then shaken vigorously so that the olives fall into the mesh. A process that is repeated manually for each tree. A centenary technique that has practically not changed and that requires accurate knowledge to not damage the olive tree. Once all the olives are harvested, the leaves and branches that have fallen must be removed and water is passed to clean the olives of dust. Once all this is done, they are ready to be pressed and extract their essence: the olive oil.
