En muchos casos se trata de aprovechar las llamas de una hoguera para hacer la carne. En otros casos no se utiliza la llama, sino que se opta para cocer los ingredientes utilizando el carb\u00f3n o las brasas. Pero las formas de preparar las barbacoas son muchas y muy variadas. <\/span><\/p>\n<blockquote><p>En algunas regiones de la Argentina se conoce como \u2018asado a la cruz\u2019 (&#8230;)<\/p><\/blockquote>\n<p><span style=\"font-weight: 400\">Uno de los pa\u00edses que tiene una t\u00e9cnica m\u00e1s elaborada -y reconocida gastronomicamente en todo el mundo- es la Argentina. Su \u2018asado argentino\u201d ha traspasado fronteras y se ha hecho un <a href=\"https:\/\/inspirationalwomenseries.org\/latin-women\/uruguay-women\/\">Uruguay women<\/a> en las mejores gu\u00edas gastron\u00f3micas. En algunas regiones de la Argentina se conoce como \u2018asado a la cruz\u2019 porque las carnes se colocan de forma vertical sobre las llamas y, para hacerlo, se utilizan unas estructuras met\u00e1licas parecidas a una cruz. En el su de la Argentina, esta forma de preparar la carne se conoce como el \u2018chiporro\u2019. <\/span><\/p>\n<p><span style=\"font-weight: 400\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-3057\" src=\"http:\/\/masterrats.com\/wp-content\/uploads\/2017\/10\/F1000029-600x400.jpg\" alt=\"\" width=\"600\" height=\"400\" srcset=\"https:\/\/masterrats.com\/wp-content\/uploads\/2017\/10\/F1000029-600x400.jpg 600w, https:\/\/masterrats.com\/wp-content\/uploads\/2017\/10\/F1000029-768x512.jpg 768w, https:\/\/masterrats.com\/wp-content\/uploads\/2017\/10\/F1000029-1024x683.jpg 1024w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/span><\/p>\n<p><span style=\"font-weight: 400\">En el Brasil, para cocinar la carne se utilizan los conocidos como \u2018rodizios\u2019, que son los palos de hierro en los que se van clavando los trozos de carne. En Chile se conoce como \u2018asado en palo\u2019 porqu\u00e9 se hace girar lentamente el palo sobre las brasas. <\/span><\/p>\n<blockquote><p>En el Brasil se conocen como \u2018rodizios\u2019 y en Chile como &#8216;asado en palo&#8217;.<\/p><\/blockquote>\n<p><span style=\"font-weight: 400\">Seg\u00fan la tradici\u00f3n guacha argentina y de algunas regiones del Uruguai, la forma de cocinar la carne se la conoce popularmente como \u2018asado con cuero\u201d. Esta t\u00e9cnica consiste en cocinar la carne sin quitarle la piel. Esto le proporciona un sabor muy caracter\u00edstico porqu\u00e9 evita que la carne se seque y mantiene toda la sustancia. Eso s\u00ed, preparar la carne de esta forma requiere mucha paciencia.\u00a0Se necesitan muchas horas a fuego lento, para evitar que el cuero se rompa.\u00a0<\/span><\/p>\n<blockquote><p>\u2018Asado con cuero&#8217;: Una t\u00e9cnica que consiste en cocinar sin quitarle la piel.<\/p><\/blockquote>\n<p><span style=\"font-weight: 400\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-3040\" src=\"http:\/\/masterrats.com\/wp-content\/uploads\/2017\/10\/F1000026-600x400.jpg\" alt=\"\" width=\"600\" height=\"400\" srcset=\"https:\/\/masterrats.com\/wp-content\/uploads\/2017\/10\/F1000026-600x400.jpg 600w, https:\/\/masterrats.com\/wp-content\/uploads\/2017\/10\/F1000026-768x512.jpg 768w, https:\/\/masterrats.com\/wp-content\/uploads\/2017\/10\/F1000026-1024x683.jpg 1024w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/span><\/p>\n<p><span style=\"font-weight: 400\">Aqu\u00ed, la t\u00e9cnica de la barbacoa m\u00e1s tradicional es la que se basa en el uso de las parrillas. Estas estructuras, situadas cerca de las brasas, permiten cocer la carne, verduras, pescado y marisco.\u00a0<\/span><span style=\"font-weight: 400\">Una variante m\u00e1s moderna y menos sofisticada de esta t\u00e9cnica es la que permite cocer los alimentos directamente sobre una placa calentada con fuego de gas.
